A proud Summit County gathering space, Rootstalk is a New American restaurant in the heart of downtown Breckenridge. Rootstalk provides elevated après ski and dinner service featuring seasonal food and curated libations. The staff at Rootstalk has made sustainability a priority in their work culture, and they’re proving to everyone that green efforts are a win-win. David Vizcaino, sous chef, identified an opportunity for Rootstock to increase their sustainability efforts and reached out to HC3 for assistance implementing the program.
Improvements made:
- Added compost collection service which cut their trash service in half
- Held staff training on recycling and composting in Summit County
- Made sustainability part of work culture

They plan to take advantage of the High Country Compost made from Summit County’s food waste and would like to use the finished compost to grow fresh produce for the restaurant. We hope that more restaurants will follow Rootstalk’s lead and keep food waste out of the landfill.
